In 2011/2012, the creators of Koro Koro reached out to their community to raise funds.
Carrie Grosso and Checho Bove had the idea of establishing a restaurant centered around the concept of healthy, gluten-free cuisine that would be accessible to everyone.
They needed capital to kickstart their venture. They communicated through media platforms, stating:
“Hello everyone!
We have dedicated well over a year to crafting our business plan, conceptualizing our idea, refining our menu, scouting for an ideal location in Downtown Jersey City (which was no simple task), and now we find ourselves in the midst of the construction phase! Soon enough, Koro Koro will proudly stand as Jersey City’s very first Japanese-style Rice Ball Café.
Despite encountering a few deals that didn’t materialize, unexpected expenses, and unforeseen delays related to construction and securing permits in Jersey City, we’ve exceeded our initial budget and could really benefit from your support! Every contribution, no matter how small, holds immeasurable value and is more cherished than you can imagine!
While our goal is set at $20,000, Kickstarter operates under an all-or-nothing principle—meaning if the target isn’t met, no funds are received. Therefore, our official Kickstarter target stands at $5,000.

And thanks to the collective efforts of many, Koro Koro Rice Ball Cafe came into existence. We are filled with pride, joy, and an overwhelming sense of gratitude.
